This is a good example of a very important tell. Players will usually glance only quickly at their chips, then away. More often than not, a player will only move her eyes, rather than her whole head, to look at her chips. It is a very big mistake not to be watching your seven stud opponent when the new cards arrive. You can always look at your own card later. A quick glance at her chips means she helped her hand. Turning away is an indication of a Weak Means Strong tell, which is covered under Tells From Actors.

Look for sandbagging (checking and then raising) opportunities. Sandbagging can be a powerful poker weapon, but it's even more desirable if you know almost for sure that your opponent will bet, as you do in this tell. If you don't have a strong hand, don't hope to catch this player bluffing. She won't be. And, certainly, don't try to bluff her.
